Following the harvest period, Bollinger's decisions on blending are not made before January. The blend for the Special Cuvée is an ideal version of the classic Champagne blend, using the different grapes of a given year from a variety of crus, with the addition of older, reserve wines. This blend necessarily incorporates subtle variations each year whilst remaining consistent to a style. It is, therefore, the hardest of all Bollinger to make. It contains the full expression of the Bollinger style and the House feels it should be judged on this - its benchmark wine. The denomination Special Cuvée was created in 1911. The idea came from William Folks, then partner of the illustrious London House of Mentzendorff. This great wine lover felt it was an insult to simply call this great wine "non vintage". The suggestion of naming it "Special Cuvée" was immediately approved by Monsieur Bollinger.A blend par excellence, the Special Cuvée is the purest expression of the Bollinger style; of its craftsmanship and its singular conception of what a champagne should be. It is, therefore, on this wine that the House of Bollinger shows how it is different from other Champagne Houses, asserts its qualitative policy and by which it asks to be judged.Madame Bollinger - "I drink it when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not hungry and drink it when I am. On the palate there are notes of stone fruits, a certain nuttiness and a hint of honey supporting the freshness of the acidity. UK stock receives an additional 6 months post-disgorgement ageing so it is ready to drink upon release but cellaring for a few years will reveal greater depths. The aperitif champagne par excellence but one which has sufficient backbone to be drunk with fish and even spicy dishes.Brut Reserve is blended from 30 still base wines from different vineyards, different vintages and the three main grape varieties which dominate the champagne region: Pinot Noir contributes body, depth of character and life-extending tannins and comes from the villages of the Montagne de Reims - Verzy, Verzenay, Mailly, Ambonnay, Mardeuil and Louvois; Chardonnay provides the lightness, elegance and finesse and is drawn from Epernay itself and the villages of the Cote des Blancs - Cuis, Oiry, Oger, Vertus, Moussy and Chouilly; Pinot Meunier supplies youthful freshness, vigour and plump character with the grapes coming from the Vallee d'Epernay - Vincelles, Venteuil, Troissy, Damery, Vandieres, Brugny, Chavot, Monthelon and Pierry.Grape: 33% Pinot Noir, 34% Chardonnay, 33% Pinot Meunier.

An impressive range of 40 to 50 crus are blended together to form this Champagne and they are all vivified separately so the cellar master has an exceptional choice of aromas available to him, thus guaranteeing the consistent Lanson taste at all times.Lanson is one of the very few Champagne Houses not practising malolactic fermentation, a fact to be noted in Champagne. This Lanson tradition allows wines to develop to the full and to better their wealth of aromas. 3 Years ageing in over 4 miles of cellars, combined with the cellar master's expertise, are essential components of perfect maturing.Lanson Brut's brilliant and clear colour is remeniscent of the straw colour and hints of amber characteristic of the Pinot Noir grape. In the glass, it is lively with a fine string of bubbles.On the nose, the impression is one of vitality and scents of spring, mixed with a touch of 'toast' and honey.To the palate are bouquets of ripe fruit and citrus fruit to create a sensation of fullness, fruitiness and lightness.
