Following their first adventure where oenophile Oz Clarke and wine novice James May strived to demystify the mysteries of French wine we join the pair in California as they take a month-long trip around the revered Californian wineries.They begin in Santa Barbara county - home of Pinot Noir where Oz is a local hero and inspiration to winemakers. Travelling on they meet wine 'renegades' an eccentric millionaire bicker when James crashes the Monaco Recreational Vehicle and argue over the quality of wine - from he inaccessible and over-priced to 'two-buck-Chuck' who knocks out bottles for only two dollars.Finally they arrive at the glamorous Napa Valley where they are dismayed to discover that they're staying in the car park. The historical sweet desert wine. Harvested grapes are spread out in the sun to dry until their sugar density reaches 19-23 Baume. Once achieved, the grapes are crushed and fermented until the process stops naturally due to the high sugar content. The must is then aged in oak barrels for a minimum of two years. Similar to the solera system, the barrels are never completely emptied. New juice is added to the barrel containing old juice and the process begins again. St. John Commandaria is a sweet wine with a powerful bouquet filled with dried fruits, spices and oak. It is luscious and full-bodied.

Lillet Blanc is made from white wine and is drier than Lillet Rouge, its red-wine counterpart. Following the harvest period, Bollinger's decisions on blending are not made before January. The blend for the Special Cuvée is an ideal version of the classic Champagne blend, using the different grapes of a given year from a variety of crus, with the addition of older, reserve wines. This blend necessarily incorporates subtle variations each year whilst remaining consistent to a style. It is, therefore, the hardest of all Bollinger to make. It contains the full expression of the Bollinger style and the House feels it should be judged on this - its benchmark wine. The denomination Special Cuvée was created in 1911. The idea came from William Folks, then partner of the illustrious London House of Mentzendorff. This great wine lover felt it was an insult to simply call this great wine "non vintage". The suggestion of naming it "Special Cuvée" was immediately approved by Monsieur Bollinger.A blend par excellence, the Special Cuvée is the purest expression of the Bollinger style; of its craftsmanship and its singular conception of what a champagne should be. It is, therefore, on this wine that the House of Bollinger shows how it is different from other Champagne Houses, asserts its qualitative policy and by which it asks to be judged.Madame Bollinger - "I drink it when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not hungry and drink it when I am. Otherwise I never touch it - unless I'm thirsty."Cool, delicate briochey nose. Nice, rich fruit with honeyed undertones, reserve wine richness and texture. UK stock receives an additional 6 months post-disgorgement ageing so it is ready to drink upon release but cellaring for a few years will reveal greater depths.
